Just like the real deal you can buy in the grocery store, only better since they’re homemade. And you can make them at home for a fraction of the cost of store-bought. Which is helpful when you’re feeding hungry teenagers who can polish off a pack or two in one sitting (just sayin’).

While it’s hard to beat a fresh chewy bagel smeared with cream cheese, these copycat breakfast pizza bagels are sure to become a new favorite. They’re hearty, easy to customize and a great choice for busy mornings.
I used store-bought bagels for this recipe because they’re convenient. But if you have a good scratch-made bagel recipe and extra time, feel free to make homemade bagels.

Breakfast Bagel Bites Ingredients Needed
- Mini bagels – I used the plain kind, but if you can find ones with everything bagel seasoning, those would add lots of flavor.
- Butter – salted or unsalted will work here.
- Eggs – use large eggs.
- Milk – makes the eggs super fluffy.
- Salt and black pepper – just enough for your liking.
- Bacon – be sure to cook and crumble it ahead of time.
- Colby Jack cheese – if you like other cheeses, see the variation section below for my recommendations.

How to Make Breakfast Pizza Bagels
Line a baking sheet with parchment paper and preheat the oven to 400 degrees.
Place bagels on the prepared pan.
Add the eggs, milk, salt, and pepper to a mixing bowl and whisk until combined.

Melt butter in a large skillet and add the egg mixture. Stir until they are almost done.
Add the scrambled eggs onto the bagel halves in equal portions.

Top with cooked, crumbled bacon. Then sprinkle with cheese.
Bake for a few minutes until the cheese has melted.

Let the bagel bites cool before serving.
Tips for Making Homemade Breakfast Bagel Bites
- Don’t overcook the eggs – they’ll finish cooking in the oven. It also helps them stay creamy and prevents the bagels from drying out.
- If you like a crunchier texture, toast the mini bagels before adding the eggs and toppings.
Recipe Substitutions & Variations
- Cheese: Swap cheddar cheese, mozzarella, or Monterey Jack for the colby jack, or use pepper jack cheese for extra spice.
- Spicy: Add a dash of hot sauce or red pepper flakes while cooking the eggs.
- Meat: Use cooked sausage crumbles, diced ham or turkey bacon.
- Bagels: Use whole wheat, everything bagel, or gluten-free mini bagels to fit your preferences. Or make them homemade if you have a favorite scratch-made bagel recipe.
- Bagel sliders: Place another bagel half on top for a grab-and-go breakfast sandwich.
- Veggies: Add diced bell peppers, onions, spinach, or mushrooms to the scrambled eggs for extra flavor. Be sure to use a small-dice if you do this.
Can I make breakfast bagel sliders ahead of time?
Yes, you can! Assemble the breakfast bites as directed up to baking, then cover, and refrigerate overnight. When ready to serve, pop them into the oven and bake until the cheese has melted and the edges are golden brown (you may need to add a couple minutes to the bake time).
What to Serve with Copycat Breakfast Bagels

Can I freeze homemade bagel bites?
If you’re into meal prepping, you can make a batch to keep in the freezer for a quick grab-and-go breakfast option. To freeze, wrap each cooked bagel bite individually and place in a freezer-safe bag or container and freeze for up to a month.
Can I use full-size bagels instead of mini ones?
Yes, just increase the baking time slightly (about 10–12 minutes) to make sure everything heats through. Keep in mind that using full size bagels will decrease the number of servings.

Copycat Breakfast Bagel Bites
Ingredients
- 5 mini bagels, halved
- 5 large eggs
- 1 tablespoon milk, whole or 2%
- kosher salt, to taste
- black pepper, to taste
- 1 tablespoon butter
- 1 cup bacon, cooked and crumbled
- 1 cup colby jack cheese, shredded
Instructions
- Preheat the oven to 400 degrees F.
- Line a large rimmed sheet pan with parchment paper. Place the bagel halves on the sheet pan cut side up, and set aside.5 mini bagels

- Melt the butter in a large skillet over medium-high heat and add the egg mixture. Stirring frequently, cook the eggs until they are almost completely cooked through (they’ll finish cooking in the oven).1 tablespoon butter
- Top the bagel slices with scrambled eggs, lightly smashing them into the bagel so they stick. Sprinkle the crumbled bacon and cheese over the top of the eggs.1 cup bacon, 1 cup colby jack cheese

Notes
- Keeping the eggs slightly soft makes them easier to spread on the bagels.
- If you like a little heat, add a couple dashes of hot sauce to the egg mixture.
